Garlic Parmesan Edamame

Mom’s “mistake” led to an awesome new recipe!

When I injured my foot several weeks ago (no idea how, and no official diagnosis…story for another time), I was required to rest as much as possible. My sweet parents (holla!) helped with my grocery shopping needs while Cliff was out of town, and Mom accidentally bought shelled edamame. < GASP >

I’m a MASSIVE edamame fan. I could eat it all day, every day and never get bored. However, I had never had shelled edamame as a side – part of the fun is eating it out of the pod! So, I decided to get make some magic happen with the shelled version and created this recipe. Special thanks to Mom! <3

Use this as a snack, or as a side to a main dinner entrée. If you’re hosting guests for dinner, pop this in the oven right before you eat because the smell will make everyone’s mouth water. 🙂
