I don't know about you, but when I am in the middle of a hectic week - one where I sometimes can't recall my name or remember what day of the week it is - there is a warm, comforting feeling that wells up inside me when I realize we have leftovers waiting for dinner. Yes, I have discovered a passion for cooking, but there are just some evenings when dinner is just...not...going...to...materialize. If I could snap my fingers and have a delicious, homecooked meal on the table each night, I would (though, the slow cooker comes close).
So, I was actually surprised with myself last week when I decided to dig deep and whip together something that could use some ingredients that needed to be "moved along." One of the best discoveries I've made since spending more time in the kitchen is the ability to flex a creative muscle I had lost touch with over the years. I had a blast creating this dish and it turns out to be one that is easy and elegant...it will really impress anyone who is lucky enough to sample it.
