One Sugar Bowl victory, with some beet cake on the side, please! Weirdest sentence you've read today? Good! I've got your attention.
First, WE ARE GOING TO THE NATIONAL CHAMPIONSHIP! Roll Tide! I know many of my friends and I will need to avoid each other until after Monday, but it's totally worth it. The Sugar Bowl hasn't been the nicest to the Crimson Tide in previous years, so this victory over Clemson feels particularly delicious.
For big games, I like to make a dessert that incorporates some crimson color just to add to the festivities. In an effort to stay a little healthier this year, I decided to try Anna Olson's Rich Beet Chocolate Cake. Unfortunately, my batter didn't turn out as red as hers, but that didn't seem to affect the game - or the taste! This was very good and definitely a dessert that Cliff and I will keep in the rotation. Although sugar is still an ingredient in the cake and frosting, it is packed with beets, so you can feel a little better about having one or two servings. The cake is dense, so your slices don't need to be very large for you to feel like you've indulged.
I'm curious to know if I can incorporate Truvia and applesauce to decrease the amount of sugar needed, so will keep you updated if it works! Either way, enjoy those beets and know that it is all about the BALANCE.
Side note - one of my Christmas gifts this year was a rotating cake stand for decorating and I got to use it for the first time. It was so much fun to play with the frosting design. I think it really takes the cake to the next level. Thanks for the idea, Anna Olson!
