Pumpkin Steel Cut Oatmeal

Ingredients
  

  • 1 cup water
  • ½ cup soy milk or other plant-based milk
  • ½ cup steel cut oats
  • ⅓ cup pumpkin puree
  • ½ teaspoon pumpkin pie spice add more as needed
  • ¼ teaspoon vanilla extract add more as needed

Equipment

  • 1 saucepan small or medium
  • measuring cups and spoons
  • 1 spoon or spatula for stirring
  • 1 whisk optional, for combining ingredients before cooking

Method
 

  1. Whisk together water, milk, pumpkin puree, pumpkin pie spice, and salt until evenly incorporated.

  2. Stir in steel cut oats. Bring to a simmer over low heat.

  3. The longer the oats cook, the thicker the finished oatmeal.
  4. Simmer for about 20 minutes, stirring frequently to prevent oats from sticking or a skin forming on top of the mixture. Adjust any seasonings according to taste (after carefully tasting), which can include more pumpkin, spices, or vanilla extract.
  5. Pumpkin puree is already cooked, so only needs to be warmed through. If you add more pumpkin, though, stir vigorously to evenly incorporate it into the mixture.
  6. Serve warm, topped with your favorite oatmeal toppings.

Notes

Substitutions: 
  • Sub more of the water with milk, or use all water and omit milk entirely. Milk adds a creamier texture to the cooked oats.
  • Add more canned pumpkin or spices as desired. 
Serve with:
Top with pecans, roasted pecan butter, maple roasted cashews, maple syrup, caramelized apples, or your other favorite oatmeal toppings!
