Pecan Pie Smoothie

Enjoying a favorite holiday dessert as a breakfast, snack, or dessert without the guilt has never been more tasty. Rich pecans with hints of maple syrup (and just a few other ingredients) mean we can chow down on pecan pie any time of day without hesitation. Cheers to that!

Ingredients
  

  • 2 cups ice
  • 1 ½ cups milk we used soy milk
  • 1 ¼ cups raw pecans soaked and drained
  • 2 frozen bananas
  • ¼ cup pure maple syrup
  • 1 tablespoon flax meal
  • ½ tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon
Aquafaba Topping (Optional - Not Included in Nutrition Facts)
  • 4 tablespoons aquafaba
  • 1 teaspoon pure vanilla extract add more to taste
  • 1 tablespoon coconut sugar add more to taste, or substitute with sweetener of your choice

  • Stand mixer (optional, for whipped topping)

Method
 

  1. Combine pecans, bananas, flax meal, and soy milk in blender and blend until smooth. You will have very small pieces of pecans that add golden flecks to the liquid.
    1 ¼ cups raw pecans, 2 frozen bananas, 1 tablespoon flax meal, 1 ½ cups milk
  2. Add maple syrup, pure vanilla extract, and cinnamon. Blend again to incorporate.
    ¼ cup pure maple syrup, ½ tablespoon pure vanilla extract, 1 teaspoon ground cinnamon
  3. Add ice and blend until you reach desired consistency. If needed, thin with more milk or water.
    2 cups ice
Aquafaba Topping (Optional)
  1. Add aquafaba, sugar, and vanilla extract to bowl of a stand mixer. Mix on high for several minutes, or until the aquafaba reaches stiff peaks. Add more sugar, if desired.
    4 tablespoons aquafaba, 1 tablespoon coconut sugar, 1 teaspoon pure vanilla extract
  2. Add a large dollop to smoothies and sprinkle with spice of your choice, if desired.

Notes

  • Use the milk of your choice.
  • Add sweetener of your choice if maple syrup is not available. Though Truvia and granulated sugar work well, add a few teaspoons at a time to ensure you reach the desired sweetness level.
