Prep
- Rinse rice under running water to remove any dust or debris. Place rice in a bowl with just enough water to cover it and rest for 30 minutes, stirring occasionally, and drain before using.½ cup white rice

Repurpose the rice water instead of pouring down the drain. Consider diluting and watering the garden or using as part of a beauty regimen.
Cooking
- Bring water to a boil and stir in butterfly pea powder, salt, and rice.1 cup water, ½ teaspoon butterfly pea powder, ⅛ teaspoon kosher salt, ½ cup white rice
- Reduce heat to a simmer and cover pot with a tight-fitting lid. Cook for 10-15 minutes, stirring occasionally to prevent rice from sticking to the pot.
- When all water has been absorbed, remove from heat and fluff. Serve warm or store in an airtight container in the refrigerator for up to a week.
Using an electric kettle to boil the water before adding to the saucepan is faster than starting from room temperature on the stovetop. It saves energy and speeds up the process, but is technically optional.
