Ingredients
  

  • ½ cup powdered sugar 70g
  • 1 tablespoon blackberry powder 6g, or sub with 4 teaspoons blackberry juice
  • 4 teaspoons soy milk 18g, neutral flavor and unsweetened, omit if using blackberry juice
  • ½ teaspoon pure vanilla extract 2g
  • ¼ cup blackberries 38g, only use if you choose blackberry juice option

  • potato masher or large spoon for extracting blackberry juice

Method
 

Blackberry Icing using Blackberry Powder
  1. Sift the powdered sugar and blackberry powder into a bowl. Pre-sift your blackberry powder to remove any seed bits before taking this step.
    ½ cup powdered sugar, 1 tablespoon blackberry powder
  2. Add vanilla extract and milk, then stir to combine.
    4 teaspoons soy milk, ½ teaspoon pure vanilla extract
Blackberry Icing using Fresh Blackberry Juice
  1. To a saucepan over low heat, add fresh blackberries.
    ¼ cup blackberries
  2. Stir briefly to check if they're starting to release juices and prevent burning. Then, mash with a potato masher or back of a spoon to release juice.
  3. Strain the pulp from the liquid.
  4. Sift powdered sugar into a bowl. Add vanilla and blackberry juice before stirring to combine.
    ½ cup powdered sugar, ½ teaspoon pure vanilla extract, ¼ cup blackberries
