Simple and delicious air fryer sweet potato cubes are a fun alternative to fries. Ready in 20 minutes with just a few ingredients, this recipe allows the natural sweet potato to shine while harnessing the crispy texture we've come to love with air frying. Enjoy!
1poundsweet potatodiced, about 2 medium sweet potatoes
2teaspoonsextra virgin olive oil
1teaspoonkosher salt
pinchcoarse sea saltoptional, for garnish
Instructions
Wash, dry, and dice the sweet potatoes. Leave the skin on, unless you prefer peeling.
In a medium bowl, add the sweet potato cubes and olive oil. Use your hands to evenly distribute the olive oil over the cubes.
Add the kosher salt and mix to evenly combine.
Preheat the air fryer to 400 degrees Fahrenheit. When ready, add the sweet potato cubes to the basket and shake to distribute so the cubes create a single layer (some overlapping is fine).
Fry for 17 minutes, shaking the basket halfway through to "turn" the cubes.
When ready, remove the air fryer basket and add sweet potato cubes to serving dish. Sprinkle with coarse sea salt and enjoy!
Notes
A little goes a long way with olive oil. You are welcome to experiment with more, but we were interested in achieving a crispier, more natural flavor for these sweet potato cubes. If you desire additional seasoning, consider adding ½ teaspoon of either garlic powder, paprika, onion powder, or other dried herbs of your choosing.
