Air Fryer Sweet Potato Cubes

Simple and delicious air fryer sweet potato cubes are a fun alternative to fries. Ready in 20 minutes with just a few ingredients, this recipe allows the natural sweet potato to shine while harnessing the crispy texture we've come to love with air frying. Enjoy!

Equipment

  • 1 air fryer

Ingredients
  

  • 1 pound sweet potato diced, about 2 medium sweet potatoes
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • pinch coarse sea salt optional, for garnish

Instructions
 

  • Wash, dry, and dice the sweet potatoes. Leave the skin on, unless you prefer peeling.
  • In a medium bowl, add the sweet potato cubes and olive oil. Use your hands to evenly distribute the olive oil over the cubes.
  • Add the kosher salt and mix to evenly combine.
  • Preheat the air fryer to 400 degrees Fahrenheit. When ready, add the sweet potato cubes to the basket and shake to distribute so the cubes create a single layer (some overlapping is fine).
  • Fry for 17 minutes, shaking the basket halfway through to "turn" the cubes.
  • When ready, remove the air fryer basket and add sweet potato cubes to serving dish. Sprinkle with coarse sea salt and enjoy!

Notes

A little goes a long way with olive oil. You are welcome to experiment with more, but we were interested in achieving a crispier, more natural flavor for these sweet potato cubes. 
If you desire additional seasoning, consider adding ½ teaspoon of either garlic powder, paprika, onion powder, or other dried herbs of your choosing.
