Banana Tahini Cookies (Vegan, GF)

What's to love about banana tahini cookies?

Healthier Ingredients. Banana reduces amount of extra fat and sugar. Tahini replaces the need for butter. Pure maple syrup is a non-refined sweetener.

Nutty flavor without nuts. Need to avoid nuts? The banana-tahini pairing adds a rich, nutty flavor that's delicious.

Create your flax meal egg by stirring flax meal (ground flax seeds) with water.

Mash your ripe bananas!  (Great stress reducer 😉)

Stir in the remaining wet ingredients (maple syrup, vanilla extract, tahini, and flax meal "egg").

Whisk together the dry ingredients (chickpea flour, baking soda, and kosher salt).

Slowly add the dry ingredients to the wet, and stir until only very small lumps remain.

Stir in your vegan chocolate chips.

Drop cookie dough onto parchment-lined baking sheet and leave a little space. These don't spread much.

Bake in a 350-degree oven for 10 minutes, or until they turn golden brown. Allow to cool.
